This Week Tuesday, October 27, 2026 Laurence Ployez In our office at 1 State St, 5 - 6:30pm   |

In the branding and selling of champagne there is myth and mystification, and then there is taste and fact. The last time Laurence Ployez was here, tasters found her presentation refreshingly free of the former and full of the latter. The wines were and still are full on the palate with impeccable balance.
We are very happy to welcome her back.
She is a 3rd generation winemaker with 3.5 hectares of Premier Cru and Grand Cru vineyards in Ludes and Maily-Champagne in the Montagne de Reims. She augments her production with long-term relationships with other growers’ equal vineyards of equal quality. Laurence sets out every year to maintain the unique identity of each vintage.
The wines are made with only first press juice. Wines aged in wooden barrels are not filtered, while the rest are lightly filtered. Bottle fermentation happens in a cellar 75 feet down, with bottles arranged sur pointe, or nose down, to maintain freshness and capture each vintage's unique nuance by reducing direct contact with the lees and preventing oxidative effects.
